You are here because you are looking for a deliciously Crispy, savory FRIED Chicken recipe that rivals the very best breaded fried chicken you have ever tasted! This recipe is a spin on Rick @ChargerMopar (40 Year Carnivore) recipe for heart attack chicken which is deep-fried in Lard. NO, Lard is not going to clog your arteries as you have been led to believe, and neither is BEEF TALLOW which is for the making of the absolute most delicious, moist, and crispy fried meats you have tasted. Because Beef Tallow can be costly if you don't have a good source of beef fat and can render yout tallow yourself, I will give two options for making Heart Attack Chicken: Shallow Fried, and Oven Fried.
Ingredients
Beef Tallow (enough for shallow frying) do not use vegetable oils here, it will not gender the same results.
Chicken pieces (whatever your favorite pieces are)
Seasonings of choice preferably sugar free
Redmond Real Salt Organic Seasoned Salt
Garlic Powder
Paprika
Method 1 - Fried Heart Attack Chicken
step 1: Season clean chicken pieces on all sides with your seasoning of choice
Step 2: Heat 1/2 inch of beef tallow in a heavy bottom pot or skillet on med - med high heat until the oil is hot approx 325-350 degrees f.
Step 3: gently place your chicken pieces in the oil, do not crowd the chicken
Step 4: cook without turning until browned on the first side (5-10 min) (if your chicken is cooking too fast turn down the heat a little)
Step 5: turn the chicken and cook until done (no pink inside) (another 5-20 min depending on the size of the chicken and if its bone in or boneless)
Step 6: using tongs or a fork, pull the chicken out of the hot grease and drain on a paper towel lined plate
Step 7: Enjoy!
Method 2 - Oven Fried Heart Attack Chicken
Preheat your oven to 375 degrees f.
step 1: Season clean chicken pieces on all sides with your seasoning of choice
Step 2: Coat your chicken on all sides with Beef Tallow (you can heat your tallow to make it easier to coat the chicken)
Step 3: prepare a cookie sheet with foil and place a baking rack on top (no need to oil it if your chicken is well coated
Step 4: Place the chicken on the baking rack, dont crowd the chicken
Step 5: Bake the chicken in the top 1/3 of the oven for 40 min to 1 hour (depending on the size of the chicken pieces and if they are bone in)
Step 6: remove from the oven and Enjoy!
